Hunter's Turkey

This is a deeper variation on the more common Hunter's Chicken. We based this on Jamie Oliver's recipe but made some modifications.


2 kg Turkey Breast
8 Bay Leaves
2 Rosmary Sprigs
1 Garlic Clove, Crushed
2 Garlic Cloves, Sliced
1/2 Bottle Mulled Wine (Glühwein)
2 Tins Chopped Tomatoes
6 Anchovy Filets, Finely Chopped
1 Handful Green Olives
2 Onions, Finely Chopped
1 Handful Bacon Bits
3 tbsp/el Smoked BBQ Sauce


  • Mix Wine, Salt, Papper, Bay Leaves and Rosmary together
  • Chop turkey into 1-inch thick slices
  • Add meat to liquid and leave in a cool place overnight
  • Remove the meat from the liquid (keeping the liquid)
  • In an ovenproof pan, with a little oil, brown the meat, then put on one side
  • Fry the anchovies, olives, onions and bacon
  • Add tomatoes and BBQ sauce - stir thoroughly
  • Return the meat and the marinade liquid and mix thoroughly
  • Place in an oven (180°C) for 1 1/2 hours.

Serving Tips

Tastes great with green beans and roast potatoes.
